A simple and delicious French dessert featuring fresh cherries baked in a custard-like batter.

- 1 1/2 pounds fresh cherries, pitted
- 3 large eggs
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- Place the pitted cherries in the prepared dish.
- In a bowl, whisk together the eggs and sugar.
- Whisk in the flour and salt until smooth.
- Gradually whisk in the milk and vanilla extract.
- Pour the batter over the cherries.
- Bake for 45-55 minutes, or until the clafoutis is golden brown and set.
- Let it cool slightly before dusting with powdered sugar (optional) and serving.
Notes
- You can use frozen cherries, but thaw and drain them first.
- For a richer flavor, use whole milk.
- Serve warm or at room temperature.
