A simple and healthy chicken burrito casserole.
Ingredients

- 1 lb cooked chicken, shredded
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup salsa
- 1/2 cup chopped onion
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 6-8 gluten-free tortillas
- 1 cup shredded dairy-free cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine chicken, black beans, corn, salsa, onion, chili powder, cumin, salt, and pepper.
- Spread a thin layer of the chicken mixture in a baking dish.
- Top with a layer of tortillas.
- Repeat layers, ending with chicken mixture.
- Sprinkle with dairy-free cheese (optional).
- Bake for 20-25 minutes, or until heated through and cheese is melted.
- Let it cool slightly before serving.
Notes
- You can add other vegetables like bell peppers.
- Feel free to use your favorite salsa.
- For extra flavor, add a dollop of dairy-free sour cream after baking.
