- 1 pound linguine
- 1 tablespoon olive oil
- 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, season chicken pieces with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Melt butter in the same skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in chicken broth and heavy cream. Bring to a simmer, stirring to combine.
- Stir in Parmesan cheese until melted and the sauce is smooth.
- Return chicken to the skillet. Add cooked linguine to the skillet with the sauce.
- Toss everything together until the pasta and chicken are well coated in the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
- Serve immediately, garnished with fresh parsley.
Notes
- You can substitute chicken breast for chicken thighs if preferred.
- Adjust seasoning to your taste.
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
