Ingredients

  • 1 pound linguine
  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, season chicken pieces with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Melt butter in the same skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in chicken broth and heavy cream. Bring to a simmer, stirring to combine.
  6. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Return chicken to the skillet. Add cooked linguine to the skillet with the sauce.
  8. Toss everything together until the pasta and chicken are well coated in the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • You can substitute chicken breast for chicken thighs if preferred.
  • Adjust seasoning to your taste.
  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
