A quick and easy creamy taco soup perfect for a weeknight meal. This hearty soup combines ground beef, beans, and corn in a rich, creamy broth with taco seasoning.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 (15 oz) can tomato sauce
- 2 cups beef broth
- 1 packet taco seasoning
- 1/2 cup heavy cream
- Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips
Instructions
- Brown ground beef in a large pot over medium heat. Add onion and cook until softened. Add garlic and cook for 1 minute more.
- Stir in black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, beef broth, and taco seasoning.
- Bring to a boil, then reduce heat and simmer for at least 15 minutes, or longer for flavors to meld.
- Stir in heavy cream and heat through. Do not boil after adding cream.
- Serve hot with your favorite toppings.
Notes
- For a spicier soup, add a pinch of cayenne pepper or a diced jalapeño with the onions.
- If you prefer a thinner soup, add more beef broth.
- This soup can be made ahead of time and reheated. The flavors will deepen overnight.
