Description

A quick and easy creamy taco soup perfect for a weeknight meal. This hearty soup combines ground beef, beans, and corn in a rich, creamy broth with taco seasoning.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (15 oz) can tomato sauce
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1/2 cup heavy cream
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips


Instructions

  1. Brown ground beef in a large pot over medium heat. Add onion and cook until softened. Add garlic and cook for 1 minute more.
  2. Stir in black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, beef broth, and taco seasoning.
  3. Bring to a boil, then reduce heat and simmer for at least 15 minutes, or longer for flavors to meld.
  4. Stir in heavy cream and heat through. Do not boil after adding cream.
  5. Serve hot with your favorite toppings.

Notes

  • For a spicier soup, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • If you prefer a thinner soup, add more beef broth.
  • This soup can be made ahead of time and reheated. The flavors will deepen overnight.
