Description
A simple recipe for a tender and flavorful pot roast made in a crock pot, complete with a delicious gravy.
Ingredients

- 3-4 lb Chuck Roast
- 1 tbsp Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Beef Broth
- 1 packet (1 oz) Ranch Dressing mix
- 1 packet (1 oz) Brown Gravy mix
- Salt and Pepper to taste
Instructions
- Season the chuck roast with salt and pepper.
- Heat olive oil in a skillet and sear the roast on all sides.
- Place the chopped onion in the bottom of the slow cooker.
- Place the seared roast on top of the onions.
- Add minced garlic, beef broth, and ranch dressing mix.
- Cook on low for 6-8 hours, or on high for 3-4 hours, until the roast is tender.
- Remove the roast from the slow cooker and let it rest.
- In a saucepan, whisk together the brown gravy mix with some of the slow cooker juices.
- Heat the gravy over medium heat until thickened.
- Slice the roast and serve with the gravy.
Notes
- You can add potatoes and carrots to the slow cooker for a complete meal. Add them in the last 2-3 hours of cooking.
- For a thicker gravy, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) to the saucepan while heating.
- Adjust seasonings to your preference.
