Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1/2 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- Brown ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
- Stir in diced tomatoes, kidney beans, beef broth, chili powder, cumin, salt, and pepper.
- Bring to a simmer, then reduce heat and cook for 15-20 minutes, stirring occasionally, until heated through and flavors have melded.
- Serve hot with your favorite toppings.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This can be made ahead of time and reheated.
- Serve over rice or with cornbread for a more filling meal.
