A simple and healthy ground turkey and sweet potato bake. This dish is perfect for a weeknight dinner or meal prep.

- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic, salt, pepper, paprika, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
- Add the diced sweet potatoes to the skillet. Stir to combine with the turkey mixture.
- Transfer the mixture to a baking dish.
- Cover the baking dish with foil and bake for 25-30 minutes, or until the sweet potatoes are tender.
- Remove the foil and bake for another 5-10 minutes to allow the top to brown slightly.
- Serve hot.
Notes
- For a creamier texture, you can add a splash of milk or cream to the mixture before baking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- This bake can be customized with your favorite vegetables, such as bell peppers or spinach.
