Description

A simple and healthy ground turkey and sweet potato bake. This dish is perfect for a weeknight dinner or meal prep.


Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, salt, pepper, paprika, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  5. Add the diced sweet potatoes to the skillet. Stir to combine with the turkey mixture.
  6. Transfer the mixture to a baking dish.
  7. Cover the baking dish with foil and bake for 25-30 minutes, or until the sweet potatoes are tender.
  8. Remove the foil and bake for another 5-10 minutes to allow the top to brown slightly.
  9. Serve hot.
