  • 300g bread flour
  • 100g whole wheat flour
  • 270g water
  • 10g salt
  • 1 cup blueberries
  • Zest of 1 lemon


Instructions

  1. Mix starter, water, and flours. Let it rest for 30 minutes.
  2. Add salt. Knead until combined.
  3. Fold in blueberries and lemon zest.
  4. Bulk ferment for 4-6 hours. Fold every 30 minutes for the first 2 hours.
  5. Shape the dough.
  6. Proof in the fridge for 12-18 hours.
  7. Bake at 450°F (232°C) for 20 minutes with the lid on.
  8. Remove the lid. Bake for another 25-30 minutes, or until golden brown.
  9. Cool completely before slicing.
