A simple and comforting soup made with rotisserie chicken.
Ingredients

- 1 rotisserie chicken
- 8 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
- 1 cup egg noodles (optional)
- Fresh parsley for garnish (optional)
Instructions
- Shred the rotisserie chicken, discarding skin and bones.
- In a large pot, combine chicken broth, carrots, celery, and onion.
- Bring to a boil, then reduce heat and simmer for 15 minutes, or until vegetables are tender.
- Add the shredded chicken, thyme, and pepper. Season with salt.
- If using, add egg noodles and cook according to package directions.
- Serve hot, garnished with fresh parsley if desired.
Notes
- You can add other vegetables like potatoes or zucchini.
- Adjust seasonings to your preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
