Description

A simple and comforting soup made with rotisserie chicken.


Ingredients

  • 1 rotisserie chicken
  • 8 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1 cup egg noodles (optional)
  • Fresh parsley for garnish (optional)


Instructions

  1. Shred the rotisserie chicken, discarding skin and bones.
  2. In a large pot, combine chicken broth, carrots, celery, and onion.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes, or until vegetables are tender.
  4. Add the shredded chicken, thyme, and pepper. Season with salt.
  5. If using, add egg noodles and cook according to package directions.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

  • You can add other vegetables like potatoes or zucchini.
  • Adjust seasonings to your preference.
