A simple and delicious one-pot chicken dinner, perfect for family meals.

- 1 whole chicken
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 lb potatoes, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Heat olive oil in a large pot or Dutch oven.
- Sear chicken on all sides. Remove chicken.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Stir in garlic. Cook for 1 minute.
- Pour in chicken broth.
- Add potatoes, thyme, and rosemary. Season with salt and pepper.
- Place chicken back in the pot.
- Cover and bake for 1 hour.
- Uncover and bake for another 15-20 minutes, or until chicken is cooked through.
- Let rest before serving.
Notes
- You can add other vegetables like parsnips or sweet potatoes.
- Adjust cooking time based on chicken size.
