Ingredients

Scale
  • 1 whole chicken
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 lb potatoes, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a large pot or Dutch oven.
  4. Sear chicken on all sides. Remove chicken.
  5. Add onion, carrots, and celery to the pot. Cook until softened.
  6. Stir in garlic. Cook for 1 minute.
  7. Pour in chicken broth.
  8. Add potatoes, thyme, and rosemary. Season with salt and pepper.
  9. Place chicken back in the pot.
  10. Cover and bake for 1 hour.
  11. Uncover and bake for another 15-20 minutes, or until chicken is cooked through.
  12. Let rest before serving.

  • You can add other vegetables like parsnips or sweet potatoes.
