Description

Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 1/2 cups fresh cranberries, roughly chopped
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the sour cream to the butter mixture, mixing until just combined.
  6. Add the dry ingredients to the wet ingredients in three additions, mixing until just combined after each addition. Do not overmix.
  7. Gently fold in the chopped fresh cranberries and walnuts (if using).
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a brighter cranberry flavor, consider adding the zest of one orange to the batter.
  • If you don’t have fresh cranberries, frozen cranberries can be used. Do not thaw before using.
