Description

Ingredients

  • 1 lb salmon fillets, skinless, cut into 1-inch pieces
  • 4 cups vegetable broth
  • 4 medium potatoes, peeled and cubed
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste


Instructions

  1. Melt butter in a large pot. Add onion and carrots, cook until softened.
  2. Add potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender.
  3. Gently add salmon pieces. Cook until salmon is cooked through.
  4. Stir in heavy cream and dill. Heat through, but do not boil.
  5. Season with salt and pepper to taste.
  6. Serve hot.
