Description
A classic Finnish salmon soup, Lohikeitto, is a creamy and flavorful soup made with salmon, potatoes, and dill.
Ingredients

- 1 lb salmon fillets, skinless, cut into 1-inch pieces
- 4 cups vegetable broth
- 4 medium potatoes, peeled and cubed
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 1 cup heavy cream
- 1/4 cup fresh dill, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Melt butter in a large pot. Add onion and carrots, cook until softened.
- Add potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender.
- Gently add salmon pieces. Cook until salmon is cooked through.
- Stir in heavy cream and dill. Heat through, but do not boil.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can use fish stock instead of vegetable broth for a richer flavor.
- Adjust the amount of dill according to your preference.
- For a thicker soup, you can mash some of the potatoes.
