A refreshing and healthy pasta salad with fresh broccoli.
Ingredients
- Pasta: 1 pound
- Broccoli: 1 head, chopped
- Cherry Tomatoes: 1 pint, halved
- Red Onion: 1/2, thinly sliced
- Feta Cheese: 4 ounces, crumbled
- Italian Dressing: 1/2 cup
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- Steam broccoli until tender-crisp.
- In a large bowl, combine pasta, broccoli, tomatoes, and red onion.
- Add feta cheese and Italian dressing. Toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can add grilled chicken or chickpeas for extra protein.
- Feel free to substitute other vegetables like bell peppers or cucumbers.
- Adjust the amount of dressing to your liking.
