- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1.5 lbs small red potatoes, quartered
- 1/4 cup olive oil
- 8 cloves garlic, minced
- 1/2 cup butter
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet. Roast for 20 minutes.
- Melt butter in a large oven-safe skillet over medium heat. Add garlic, oregano, and thyme. Cook for 1 minute.
- Add chicken to the skillet. Season with salt and pepper. Cook until browned.
- Add roasted potatoes to the skillet.
- Bake in the preheated oven for 15-20 minutes, or until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley.
Notes
- You can add other vegetables, like broccoli or bell peppers.
