Simple and delicious Garlic Parmesan Crockpot Chicken and Potatoes. A complete meal cooked effortlessly in your slow cooker.
Ingredients
- Chicken breasts: 1.5 lbs
- Potatoes: 2 lbs, peeled and cubed
- Chicken broth: 1 cup
- Garlic: 4 cloves, minced
- Grated Parmesan cheese: 1/2 cup
- Italian seasoning: 1 tbsp
- Salt: to taste
- Black pepper: to taste
- Olive oil: 1 tbsp
Instructions
- Place potatoes in the bottom of the crockpot.
- Place chicken breasts on top of the potatoes.
- In a bowl, whisk together chicken broth, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken and potatoes.
- Drizzle with olive oil.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and potatoes are tender.
- Shred the chicken with two forks before serving.
Notes
- For extra flavor, add some carrots and onions.
- You can use boneless, skinless chicken thighs instead of chicken breasts.
- Adjust seasonings to your preference.
- Serve with a side salad or your favorite vegetables.
