Description

Simple and delicious Garlic Parmesan Crockpot Chicken and Potatoes. A complete meal cooked effortlessly in your slow cooker.


Ingredients

  • Chicken breasts: 1.5 lbs
  • Potatoes: 2 lbs, peeled and cubed
  • Chicken broth: 1 cup
  • Garlic: 4 cloves, minced
  • Grated Parmesan cheese: 1/2 cup
  • Italian seasoning: 1 tbsp
  • Salt: to taste
  • Black pepper: to taste
  • Olive oil: 1 tbsp


Instructions

  1. Place potatoes in the bottom of the crockpot.
  2. Place chicken breasts on top of the potatoes.
  3. In a bowl, whisk together chicken broth, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Pour the mixture over the chicken and potatoes.
  5. Drizzle with olive oil.
  6. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and potatoes are tender.
  7. Shred the chicken with two forks before serving.

Notes

  • For extra flavor, add some carrots and onions.
  • You can use boneless, skinless chicken thighs instead of chicken breasts.
  • Adjust seasonings to your preference.
