Instructions
- In a bowl, combine crushed gingerbread cookies, softened cream cheese, powdered sugar, gingerbread spice, and vanilla extract.
- Mix until well combined and a dough forms.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes.
- Dip each chilled ball into melted white chocolate, ensuring it is fully coated.
- Place the coated truffles back on the parchment-lined sheet.
- Immediately sprinkle with gingerbread crumbs or sprinkles before the chocolate sets.
- Allow the chocolate to harden completely before serving.
Notes
- For a stronger gingerbread flavor, add an extra 1/4 teaspoon of gingerbread spice.
- Store truffles in an airtight container in the refrigerator for up to a week.
- You can use dark or milk chocolate for coating if preferred.
