Ingredients

- 1 pound ground turkey
- 2 medium zucchini, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook, breaking it up, until browned. Drain any excess grease.
- Add onion and cook until softened.
- Stir in garlic, zucchini, diced tomatoes, oregano, basil, salt, and pepper.
- Bring to a simmer and cook for 15-20 minutes, or until zucchini is tender.
- Serve hot.
Notes
- You can add other vegetables like bell peppers or mushrooms.
- Serve over rice, quinoa, or with a side salad.
