Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups low-sodium vegetable broth
  • 1 cup milk (or unsweetened almond milk)
  • 1/2 cup shredded cheddar cheese
  • 1 scoop unflavored protein powder
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until broccoli is tender.
  4. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  5. Return the soup to the pot. Stir in milk and protein powder until well combined.
  6. Heat gently over low heat, stirring constantly, until warmed through. Do not boil.
  7. Stir in cheddar cheese until melted and smooth.
  8. Season with salt and pepper to taste.
