Ingredients

- 1 lb ground beef
- 1 onion, sliced
- 1 bell pepper, sliced
- 8 oz sliced mushrooms
- 1 packet (1 oz) sugar-free onion soup mix
- 1/2 cup beef broth
- 4 oz cream cheese
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet. Drain any excess fat.
- Add onion, bell pepper, and mushrooms. Cook until softened.
- Stir in onion soup mix and beef broth. Simmer for 5 minutes.
- Add cream cheese and stir until melted.
- Season with salt and pepper.
- Transfer mixture to a baking dish.
- Top with shredded cheddar cheese.
- Bake for 15-20 minutes, or until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- You can add other vegetables, like jalapenos, for extra flavor.
- For a spicier casserole, use pepper jack cheese.
- Serve with a side salad for a complete meal.
