Ingredients

- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup honey BBQ sauce
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened.
- Stir in garlic, rice, and chicken broth.
- Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.
- Stir in honey BBQ sauce.
- Cook for another 5-10 minutes, or until rice is tender and sauce has thickened.
- Garnish with parsley, if desired.
Notes
- You can substitute brown rice for long-grain rice. Cooking time may vary.
- Add vegetables like bell peppers or corn for extra flavor.
- Adjust the amount of BBQ sauce to your preference.
