Learn how to make delicious, flaky, and authentic croissants at home.
Ingredients
- All-purpose flour: 2 1/2 cups
- Granulated sugar: 1/4 cup
- Salt: 1 teaspoon
- Active dry yeast: 2 1/2 teaspoons
- Whole milk: 3/4 cup, lukewarm
- Unsalted butter: 1/2 cup, plus 1 1/4 cups cold, for laminating
- Egg: 1, for egg wash
- Water: 1 tablespoon, for egg wash
Instructions
- In a large bowl, whisk together flour, sugar, and salt.
- In a separate bowl, combine yeast and lukewarm milk. Let stand for 5 minutes.
- Add the milk mixture to the flour mixture. Mix until a dough forms.
- Knead the dough for 5-7 minutes.
- Wrap the dough and chill for 1 hour.
- Place the 1 1/4 cups of cold butter between two sheets of parchment paper and flatten it to a 5×7 inch rectangle. Chill.
- Roll the dough into a 8×10 inch rectangle.
- Place the butter in the center and fold the dough over it. Seal the edges.
- Roll the dough into a rectangle and fold it in thirds.
- Wrap and chill for 1 hour.
- Repeat rolling, folding, and chilling twice more.
- Roll the dough into a 12×10 inch rectangle.
- Cut triangles and shape into croissants.
- Brush with egg wash.
- Bake at 375°F (190°C) for 20-25 minutes.
Notes
- Make sure your butter is very cold for the best results.
- Don’t skip the chilling steps.
- You can add chocolate or other fillings.
