  • 1 (15 oz) can diced tomatoes, undrained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground chicken or turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, smoked paprika, and chili powder. Cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and add the diced tomatoes. Bring to a simmer.
  5. Stir in the rinsed and drained black beans and frozen corn.
  6. Reduce heat to low, cover, and simmer for at least 20 minutes to allow the flavors to meld.
  7. Stir in the fresh cilantro. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a spicier soup, add a pinch of cayenne pepper or a diced jalapeño with the garlic.
