Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 ounces brie cheese, rind removed, cut into 4 pieces
  • 1/4 cup fresh or frozen cranberries
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon olive oil
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly each chicken breast by slicing horizontally, almost all the way through, to create a pocket.
  3. Season the inside and outside of the chicken breasts with salt and pepper.
  4. Stuff each chicken breast pocket with one piece of brie and a tablespoon of cranberries.
  5. Press the edges of the chicken to seal the stuffing.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven.
  9. Bake for 20-25 minutes, or until the chicken is cooked through and the brie is melted and bubbly.
  10. Let rest for a few minutes before serving.

Notes

  • For a sweeter filling, you can add a teaspoon of brown sugar to the cranberries.
  • Fresh rosemary adds a lovely aroma, but dried rosemary can be used in a pinch.
