- 4 boneless, skinless chicken breasts
- 4 ounces brie cheese, rind removed, cut into 4 pieces
- 1/4 cup fresh or frozen cranberries
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly each chicken breast by slicing horizontally, almost all the way through, to create a pocket.
- Season the inside and outside of the chicken breasts with salt and pepper.
- Stuff each chicken breast pocket with one piece of brie and a tablespoon of cranberries.
- Press the edges of the chicken to seal the stuffing.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and the brie is melted and bubbly.
- Let rest for a few minutes before serving.
Notes
- For a sweeter filling, you can add a teaspoon of brown sugar to the cranberries.
- Fresh rosemary adds a lovely aroma, but dried rosemary can be used in a pinch.
- Ensure the brie is at room temperature for easier stuffing.
