A refreshing Italian Tortellini Pasta Salad, perfect for any occasion.
Ingredients

- 1 pound cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/4 cup Italian dressing
- 2 tablespoons fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse with cold water.
- In a large bowl, combine tortellini, tomatoes, cucumber, red onion, and olives.
- Pour Italian dressing over the salad.
- Add basil, salt, and pepper. Toss to combine.
- Refrigerate for at least 30 minutes before serving.

- You can add cooked chicken or salami for extra protein.
