- 1 head cauliflower, riced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth

Instructions
- Heat olive oil in a large pan.
- Brown ground beef, drain excess fat.
- Add onion and garlic, cook until softened.
- Stir in cauliflower rice.
- Pour in beef broth, season with salt and pepper.
- Simmer until cauliflower is tender.
- Top with cheese, cook until melted.
