  • 1 tbsp avocado oil
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/4 tsp red pepper flakes (optional)
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 2 green onions, sliced


Instructions

  1. Cook the ground pork in a large skillet over medium-high heat until browned. Drain off excess fat.
  2. Add avocado oil to the skillet. Add chopped onion and cook until softened, about 3-4 minutes.
  3. Stir in minced garlic and grated ginger, and cook for 1 minute more until fragrant.
  4. Pour in soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Stir to combine.
  5. Add the coleslaw mix to the skillet. Cook, stirring, until the cabbage is tender-crisp, about 5-7 minutes.
  6. Garnish with sliced green onions before serving.
