Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut bell peppers in half lengthwise and remove seeds.
  3. In a skillet, brown ground beef. Drain any excess fat.
  4. Add onion and garlic to the skillet and cook until softened.
  5. Stir in diced tomatoes, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  6. Fill each bell pepper half with the beef mixture.
  7. Top with shredded cheddar cheese.
  8. Bake for 30-40 minutes, or until the peppers are tender and the cheese is melted.
