- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 3-5 tablespoons ice water
- 1 cup fresh blueberries
- 1/2 cup granulated sugar
- 1/4 cup lemon juice
- 2 tablespoons cornstarch
- 1 tablespoon butter
- Zest of 1 lemon
Instructions
- Make the crust: Whisk flour, sugar, and salt. Cut in cold butter. Add ice water, one tablespoon at a time, until the dough comes together.
- Wrap the dough and chill for 30 minutes.
- Roll out the dough and place it in a tart pan. Trim the edges.
- Pre-bake the crust at 375°F (190°C) for 15 minutes.
- Make the filling: Combine blueberries, sugar, lemon juice, and cornstarch.
- Cook the filling over medium heat until it thickens. Stir in the butter and lemon zest.
- Pour the filling into the pre-baked crust.
- Bake at 350°F (175°C) for 20-25 minutes.
- Let the tart cool completely before serving.
Notes
- You can use frozen blueberries.
- For a richer crust, add an egg yolk to the dough.
- Serve chilled for best results.
