Ingredients

  • 3-5 tablespoons ice water
  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • Zest of 1 lemon


Instructions

  1. Make the crust: Whisk flour, sugar, and salt. Cut in cold butter. Add ice water, one tablespoon at a time, until the dough comes together.
  2. Wrap the dough and chill for 30 minutes.
  3. Roll out the dough and place it in a tart pan. Trim the edges.
  4. Pre-bake the crust at 375°F (190°C) for 15 minutes.
  5. Make the filling: Combine blueberries, sugar, lemon juice, and cornstarch.
  6. Cook the filling over medium heat until it thickens. Stir in the butter and lemon zest.
  7. Pour the filling into the pre-baked crust.
  8. Bake at 350°F (175°C) for 20-25 minutes.
  9. Let the tart cool completely before serving.

Notes

  • You can use frozen blueberries.
