Description

A light and flavorful one-pot dinner featuring lemon garlic shrimp and orzo pasta.


Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup water
  • 1 lemon, zested and juiced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  3. Add garlic and red pepper flakes (if using) to the pot and cook for 30 seconds.
  4. Stir in orzo pasta and cook for 1 minute.
  5. Pour in chicken broth and water. Bring to a boil.
  6. Reduce heat and simmer for 8-10 minutes, or until orzo is cooked.
  7. Stir in lemon zest, lemon juice, and parsley.
  8. Season with salt and pepper.
  9. Add the shrimp back to the pot and heat through.
  10. Serve immediately.

Notes

  • You can substitute vegetable broth for chicken broth.
  • Adjust the amount of red pepper flakes to your preference.
  • Garnish with extra parsley and lemon wedges.
