Description
A light and flavorful one-pot dinner featuring lemon garlic shrimp and orzo pasta.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup water
- 1 lemon, zested and juiced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
- Add garlic and red pepper flakes (if using) to the pot and cook for 30 seconds.
- Stir in orzo pasta and cook for 1 minute.
- Pour in chicken broth and water. Bring to a boil.
- Reduce heat and simmer for 8-10 minutes, or until orzo is cooked.
- Stir in lemon zest, lemon juice, and parsley.
- Season with salt and pepper.
- Add the shrimp back to the pot and heat through.
- Serve immediately.
Notes
- You can substitute vegetable broth for chicken broth.
- Adjust the amount of red pepper flakes to your preference.
- Garnish with extra parsley and lemon wedges.
