Description

A refreshing pasta salad with pesto, tomatoes, mozzarella, and a light creamy dressing.


Ingredients

  • 8 ounces pasta
  • 1/4 cup pesto
  • 1 pint cherry tomatoes, halved
  • 8 ounces mozzarella balls, halved
  • 1/4 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions.
  2. Drain the pasta and rinse with cold water.
  3. In a bowl, combine pesto, tomatoes, and mozzarella.
  4. In a separate bowl, whisk together heavy cream, olive oil, and lemon juice.
  5. Season with salt and pepper.
  6. Pour dressing over pasta and toss to combine.
  7. Refrigerate for at least 30 minutes before serving.
