A creamy and hearty loaded potato soup, perfect for a comforting meal.
Ingredients

- 4 large potatoes, peeled and diced
- 1 cup chopped onion
- 1/2 cup chopped celery
- 4 cups chicken broth
- 2 cups milk
- 1/2 cup butter
- 1/4 cup all-purpose flour
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped chives
- Salt and pepper to taste
Instructions
- In a large pot, combine diced potatoes, chopped onion, chopped celery, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- While potatoes are simmering, melt butter in a separate saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Cook, stirring constantly, until thickened.
- Add the thickened milk mixture to the pot with the potatoes.
- Stir in shredded cheddar cheese until melted.
- Remove from heat and stir in sour cream and chopped chives.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thicker soup, mash some of the potatoes against the side of the pot.
- Add cooked bacon bits for extra flavor and texture.
- Garnish with additional cheese and chives before serving.
