This Loaded Potato Taco Bowl is a hearty and flavorful meal, perfect for meal prepping. It’s packed with protein and vegetables, making it a healthy and satisfying dinner option for you and your family.


Ingredients

  • 2 lbs russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, guacamole


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes, or until golden and tender.
  4. While potatoes roast, brown ground meat in a skillet. Drain any excess grease.
  5. Add taco seasoning and water to the meat. Simmer for 5 minutes.
  6. In the same skillet, sauté red bell pepper and onion until softened.
  7. Add black beans and corn to the skillet. Heat through.
  8. Assemble bowls: Layer roasted potatoes, taco meat, vegetable mixture, and your favorite toppings.
