- 2 lbs russet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 lb ground turkey or beef
- 1 packet taco seasoning
- 1 cup water
- 1 red bell pepper, diced
- 1 onion, diced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn
- Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, guacamole
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 25-30 minutes, or until golden and tender.
- While potatoes roast, brown ground meat in a skillet. Drain any excess grease.
- Add taco seasoning and water to the meat. Simmer for 5 minutes.
- In the same skillet, sauté red bell pepper and onion until softened.
- Add black beans and corn to the skillet. Heat through.
- Assemble bowls: Layer roasted potatoes, taco meat, vegetable mixture, and your favorite toppings.
