Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Place flour in another shallow dish.
  4. In a third shallow dish, whisk the eggs.
  5. Dredge each chicken breast in flour, then dip in the egg wash, and finally coat with the breadcrumb mixture.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear chicken breasts for 2-3 minutes per side, until golden brown.
  8. Top each chicken breast with marinara sauce and mozzarella cheese.
  9. Bake for 20-25 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  10. Serve immediately.
