- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 head cauliflower, riced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Brown ground beef in a skillet. Drain any grease.
- Add onion and garlic. Cook until softened.
- Stir in cauliflower rice, diced tomatoes, beef broth, oregano, basil, salt, and pepper.
- Bring to a simmer. Cook for 10 minutes, stirring occasionally.
- Transfer mixture to a baking dish.
- Top with cheddar cheese.
- Bake at 375°F (190°C) for 20 minutes, or until cheese is melted and bubbly.
Notes
- You can add other vegetables, like bell peppers or mushrooms.
- For extra flavor, use a mix of cheeses.
