Description

A delicious and healthy low-carb casserole. It features ground beef, cauliflower rice, and a savory sauce.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 head cauliflower, riced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese


Instructions

  1. Brown ground beef in a skillet. Drain any grease.
  2. Add onion and garlic. Cook until softened.
  3. Stir in cauliflower rice, diced tomatoes, beef broth, oregano, basil, salt, and pepper.
  4. Bring to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Transfer mixture to a baking dish.
  6. Top with cheddar cheese.
  7. Bake at 375°F (190°C) for 20 minutes, or until cheese is melted and bubbly.
