Description

A delicious and easy low-carb casserole. It features zucchini, ground beef, and cheese.


Ingredients

Scale
  • 1 lb ground beef
  • 1 large zucchini, sliced
  • 1 onion, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese


Instructions

  1. Brown ground beef in a skillet. Drain any grease.
  2. Add onion and cook until softened.
  3. Stir in diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  4. Simmer for 10 minutes.
  5. Layer zucchini slices in a baking dish.
  6. Pour beef mixture over zucchini.
  7. Sprinkle with cheese.
  8. Bake at 375°F (190°C) for 25-30 minutes, or until zucchini is tender and cheese is melted.

Notes

  • You can add other vegetables like bell peppers.
