Description
A delicious and easy low-carb casserole. It features zucchini, ground beef, and cheese.

- 1 lb ground beef
- 1 large zucchini, sliced
- 1 onion, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
Instructions
- Brown ground beef in a skillet. Drain any grease.
- Add onion and cook until softened.
- Stir in diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
- Simmer for 10 minutes.
- Layer zucchini slices in a baking dish.
- Pour beef mixture over zucchini.
- Sprinkle with cheese.
- Bake at 375°F (190°C) for 25-30 minutes, or until zucchini is tender and cheese is melted.
Notes
- You can add other vegetables like bell peppers.
- Feel free to use different types of cheese.
