Ingredients
- Gluten-free rolled oats: 1 cup
- Pecan Flour: 1/2 cup
- Maple syrup: 1/2 cup
- Coconut oil (or dairy-free butter): 1/4 cup, softened
- Egg (or flax egg for vegan): 1 large
- Vanilla extract: 1 teaspoon
- Baking soda: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Chopped pecans: 1/2 cup
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix coconut oil (or butter) and maple syrup.
- Add the egg (or flax egg) and vanilla extract. Stir well.
- In a separate bowl, whisk together the oats, pecan flour, baking soda, and salt.
- Combine the wet and dry ingredients. Mix until just combined.
- Fold in the chopped pecans.
- Drop by spoonfuls onto a baking sheet.
- Bake for 10-12 minutes, or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

- For dairy-free: Use coconut oil or dairy-free butter.
- For vegan: Use a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water, let sit for 5 minutes).
