Description

A simple and flavorful Mediterranean-inspired breakfast or brunch dish featuring baked feta cheese and eggs.


Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped red onion
  • 1 clove garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 4 ounces feta cheese, crumbled
  • 4 eggs
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add bell peppers and red onion; cook until softened, about 5 minutes.
  4. Stir in garlic, diced tomatoes, oregano, and red pepper flakes (if using). Season with salt and pepper. Simmer for 5 minutes.
  5. Sprinkle the crumbled feta cheese over the tomato mixture.
  6. Make 4 wells in the feta and tomato mixture. Crack an egg into each well.
  7. Bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  8. Garnish with fresh parsley. Serve immediately.

Notes

  • You can add other vegetables, like spinach or zucchini.
  • Adjust the cooking time based on your preferred egg yolk consistency.
