Ingredients

- 2 tablespoons olive oil
- 1/2 cup chopped bell peppers
- 1/4 cup chopped red onion
- 1 clove garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/4 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 4 ounces feta cheese, crumbled
- 4 eggs
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add bell peppers and red onion; cook until softened, about 5 minutes.
- Stir in garlic, diced tomatoes, oregano, and red pepper flakes (if using). Season with salt and pepper. Simmer for 5 minutes.
- Sprinkle the crumbled feta cheese over the tomato mixture.
- Make 4 wells in the feta and tomato mixture. Crack an egg into each well.
- Bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
- Garnish with fresh parsley. Serve immediately.
Notes
- You can add other vegetables, like spinach or zucchini.
- Adjust the cooking time based on your preferred egg yolk consistency.
- Serve with crusty bread for dipping.
