Ingredients
- Chicken breast (8 oz)
- Olive oil (1 tbsp)
- Lemon juice (1 tbsp)
- Dried oregano (1 tsp)
- Salt and pepper to taste
- Cooked quinoa (1 cup)
- Cucumber (1/2, diced)
- Cherry tomatoes (1/2 cup, halved)
- Red onion (1/4, thinly sliced)
- Kalamata olives (1/4 cup)
- Feta cheese (2 tbsp, crumbled)
Instructions
- Marinate chicken in olive oil, lemon juice, oregano, salt, and pepper for 15 minutes.
- Cook chicken until done.
- Assemble the bowl with quinoa, chicken, cucumber, tomatoes, red onion, olives, and feta.

- You can grill, bake, or pan-fry the chicken.
- Adjust vegetables to your liking.
- Add a drizzle of olive oil before serving.
