Description

A flavorful and healthy Mediterranean Chicken Bowl.


Ingredients

  • Chicken breast (8 oz)
  • Olive oil (1 tbsp)
  • Lemon juice (1 tbsp)
  • Dried oregano (1 tsp)
  • Salt and pepper to taste
  • Cooked quinoa (1 cup)
  • Cucumber (1/2, diced)
  • Cherry tomatoes (1/2 cup, halved)
  • Red onion (1/4, thinly sliced)
  • Kalamata olives (1/4 cup)
  • Feta cheese (2 tbsp, crumbled)


Instructions

  1. Marinate chicken in olive oil, lemon juice, oregano, salt, and pepper for 15 minutes.
  2. Cook chicken until done.
  3. Assemble the bowl with quinoa, chicken, cucumber, tomatoes, red onion, olives, and feta.
