Ingredients

  • Chicken breast (2)
  • Lemon (1)
  • Fresh dill (1/4 cup)
  • Olive oil (2 tbsp)
  • Garlic (2 cloves)
  • Salt (to taste)
  • Black pepper (to taste)
  • Quinoa (1 cup, cooked)
  • Cucumber (1, chopped)
  • Cherry tomatoes (1 cup, halved)
  • Red onion (1/4, thinly sliced)
  • Feta cheese (1/4 cup)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken with salt, pepper, olive oil, minced garlic, lemon zest, and juice.
  3. Bake chicken for 20-25 minutes, or until cooked through.
  4. While chicken cooks, prepare quinoa.
  5. Chop cucumbers, tomatoes, and red onion.
  6. Once chicken is cooked, shred or dice it.
  7. Combine quinoa, chicken, vegetables, and feta cheese in bowls.
  8. Garnish with fresh dill.
