Description
Delicious Mediterranean quesadillas. Packed with spinach, feta, mozzarella, and red onion.
Ingredients
- Spinach (1 cup)
- Feta cheese (1/4 cup)
- Mozzarella cheese (1/2 cup)
- Red onion (1/4 cup, sliced)
- Tortillas (2 large)
- Olive oil (1 tbsp)
Instructions
- Sauté red onion in olive oil until softened.
- Add spinach and cook until wilted.
- Mix in feta and mozzarella.
- Fill tortillas with the mixture.
- Fold or top with another tortilla.
- Cook in a pan until golden and cheese melts.
- Cut and serve.

- Adjust cheese amounts to your liking.
- Serve with a side of tzatziki.
