- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cup frozen corn
- 1/2 cup red onion, chopped
- 1 packet (1.25 ounces) taco seasoning
- 1/2 cup chicken broth
- 1/4 cup mayonnaise
- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped cilantro
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned, about 5-7 minutes.
- Add bell peppers and red onion, cook until softened, about 5 minutes.
- Stir in corn and taco seasoning. Cook for 1 minute.
- Pour in chicken broth and bring to a simmer. Reduce heat and cook until chicken is cooked through, about 5-7 minutes.
- Remove from heat and stir in mayonnaise.
- Top with cotija cheese and cilantro.
- Serve with lime wedges.
Notes
- Feel free to add a can of black beans for extra protein.
- Adjust the amount of taco seasoning to your preference.
- If you don’t have cotija cheese, you can substitute with feta cheese.
