Description

A flavorful one-pan meal featuring Mexican street corn flavors with chicken, perfect for a quick weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup frozen corn
  • 1/2 cup red onion, chopped
  • 1 packet (1.25 ounces) taco seasoning
  • 1/2 cup chicken broth
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped cilantro
  • Lime wedges, for serving


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned, about 5-7 minutes.
  3. Add bell peppers and red onion, cook until softened, about 5 minutes.
  4. Stir in corn and taco seasoning. Cook for 1 minute.
  5. Pour in chicken broth and bring to a simmer. Reduce heat and cook until chicken is cooked through, about 5-7 minutes.
  6. Remove from heat and stir in mayonnaise.
  7. Top with cotija cheese and cilantro.
  8. Serve with lime wedges.

Notes

  • Feel free to add a can of black beans for extra protein.
  • Adjust the amount of taco seasoning to your preference.
  • If you don’t have cotija cheese, you can substitute with feta cheese.
