Quick and easy mild chicken curry, perfect for busy weeknights.

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- Cooked rice, for serving
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened.
- Stir in garlic, curry powder, cumin, and turmeric. Cook for 1 minute.
- Pour in diced tomatoes and chicken broth. Bring to a simmer.
- Reduce heat and simmer for 15 minutes, or until chicken is cooked through.
- Stir in coconut milk. Season with salt and pepper.
- Serve over cooked rice. Garnish with cilantro.
Notes
- Adjust the amount of curry powder to your preference.
- For a thicker curry, simmer for a longer period.
- You can add vegetables like bell peppers or peas.
