Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Fresh cilantro, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add onion and cook until softened.
  4. Stir in garlic, curry powder, cumin, and turmeric. Cook for 1 minute.
  5. Pour in diced tomatoes and chicken broth. Bring to a simmer.
  6. Reduce heat and simmer for 15 minutes, or until chicken is cooked through.
  7. Stir in coconut milk. Season with salt and pepper.
  8. Serve over cooked rice. Garnish with cilantro.
