Description

A comforting and flavorful Japanese miso udon noodle soup featuring savory teriyaki-glazed mushrooms.


Ingredients

  • 8 ounces udon noodles
  • 4 cups vegetable broth
  • 1/4 cup white miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake (optional)
  • 1 tablespoon sesame oil
  • 8 ounces shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 green onions, thinly sliced
  • 2 tablespoons teriyaki sauce
  • Salt to taste
  • Pepper to taste


Instructions

  1. Cook udon noodles according to package directions. Drain and set aside.
  2. In a medium bowl, whisk together vegetable broth, miso paste, soy sauce, mirin, and sake (if using) until well combined.
  3. Heat sesame oil in a large pot or Dutch oven over medium heat. Add sliced mushrooms and cook until browned and tender, about 5-7 minutes.
  4. Add minced garlic and grated ginger to the pot and cook for 1 minute more until fragrant.
  5. Pour the miso broth mixture into the pot. Bring to a simmer, but do not boil.
  6. Stir in the teriyaki sauce.
  7. Add the cooked udon noodles to the soup.
  8. Garnish with sliced green onions.
  9. Season with salt and pepper to taste.

Notes

  • For a richer flavor, you can add a splash of dashi powder to the broth.
  • Feel free to add other vegetables like bok choy, spinach, or carrots.
  • Adjust miso paste quantity to your preference for saltiness and flavor.
