- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup chopped mushrooms
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally almost all the way through, then opening them like a book.
- In a skillet, heat olive oil over medium heat. Add mushrooms and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Remove from heat. Stir in breadcrumbs, parsley, thyme, salt, and pepper.
- Stuff the mushroom mixture into the pocket of each chicken breast.
- Close the chicken breasts and secure with toothpicks if needed.
- Place the stuffed chicken breasts in a baking dish.
- Sprinkle Parmesan cheese over the top.
- Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is golden brown.

- Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
- You can add other herbs like rosemary or sage to the stuffing.
