Description

A simple and quick recipe for chicken breasts stuffed with mushrooms and herbs, baked to perfection. This dish is perfect for a weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup chopped mushrooms
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally almost all the way through, then opening them like a book.
  3. In a skillet, heat olive oil over medium heat. Add mushrooms and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Remove from heat. Stir in breadcrumbs, parsley, thyme, salt, and pepper.
  5. Stuff the mushroom mixture into the pocket of each chicken breast.
  6. Close the chicken breasts and secure with toothpicks if needed.
  7. Place the stuffed chicken breasts in a baking dish.
  8. Sprinkle Parmesan cheese over the top.
  9. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is golden brown.
