A classic, hearty meal featuring tender beef and rich gravy.
Ingredients

- 2 lbs beef stew meat
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 3 tbsp all-purpose flour
- 1/4 cup cold water
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a large pot. Sear beef until browned. Remove beef and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Add garlic and cook for 1 minute.
- Return beef to the pot. Add beef broth, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 2-3 hours, or until beef is tender.
- In a small bowl, whisk together flour and cold water to make a slurry.
- Stir slurry into the gravy and cook until thickened.
- Serve hot.
Notes
- Serve with mashed potatoes or rice.
- Add mushrooms for extra flavor.
- For a thicker gravy, add more flour slurry.
