Description

A classic, hearty meal featuring tender beef and rich gravy.


Ingredients

  • 2 lbs beef stew meat
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 3 tbsp all-purpose flour
  • 1/4 cup cold water


Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large pot. Sear beef until browned. Remove beef and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened.
  4. Add garlic and cook for 1 minute.
  5. Return beef to the pot. Add beef broth, tomato paste, thyme, and rosemary.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until beef is tender.
  7. In a small bowl, whisk together flour and cold water to make a slurry.
  8. Stir slurry into the gravy and cook until thickened.
  9. Serve hot.

Notes

  • Serve with mashed potatoes or rice.
  • Add mushrooms for extra flavor.
  • For a thicker gravy, add more flour slurry.
