- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 8 ounces egg noodles
- 2 tablespoons olive oil
- 1/2 cup butter
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken pieces and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
- Push chicken to one side of the skillet. Add butter and let it melt.
- Add egg noodles to the skillet and stir to coat with butter.
- Pour in chicken broth and bring to a simmer.
- Cover the skillet and cook for 10-12 minutes, or until noodles are tender and most of the liquid is absorbed, stirring occasionally.
- Stir in Parmesan cheese.
- Season with additional salt and pepper if needed.
- Garnish with fresh parsley if desired.

- You can use chicken tenderloins for this recipe.
- Feel free to add your favorite vegetables like broccoli florets or peas.
