Description
A simple and delicious one-pan meal featuring tender chicken, flavorful rice, and a sweet and savory honey BBQ sauce.
Ingredients
- Chicken thighs: 6-8, bone-in, skin-on
- Rice: 2 cups, long-grain
- Chicken broth: 4 cups
- Honey BBQ sauce: 1 cup
- Onion: 1, chopped
- Garlic: 2 cloves, minced
- Olive oil: 1 tablespoon
- Salt and pepper: To taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Heat olive oil in a large oven-safe pan over medium-high heat.
- Sear chicken until golden brown. Remove from pan.
- Add onion to the pan and cook until softened. Add garlic and cook for 1 minute.
- Stir in rice and chicken broth. Bring to a boil.
- Arrange chicken over the rice.
- Pour honey BBQ sauce over chicken.
- Cover and bake for 30 minutes.
- Uncover and bake for another 15-20 minutes, or until chicken is cooked through and rice is tender.
- Let it rest for 5 minutes. Serve.
Notes
- You can use boneless, skinless chicken thighs.
- Adjust the amount of honey BBQ sauce to your preference.
- Garnish with chopped green onions or parsley.
