A simple and delicious one-pan meal featuring tender chicken, flavorful rice, and a sweet and savory honey BBQ sauce.


Ingredients

  • Chicken thighs: 6-8, bone-in, skin-on
  • Rice: 2 cups, long-grain
  • Chicken broth: 4 cups
  • Honey BBQ sauce: 1 cup
  • Onion: 1, chopped
  • Garlic: 2 cloves, minced
  • Olive oil: 1 tablespoon
  • Salt and pepper: To taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a large oven-safe pan over medium-high heat.
  4. Sear chicken until golden brown. Remove from pan.
  5. Add onion to the pan and cook until softened. Add garlic and cook for 1 minute.
  6. Stir in rice and chicken broth. Bring to a boil.
  7. Arrange chicken over the rice.
  8. Pour honey BBQ sauce over chicken.
  9. Cover and bake for 30 minutes.
  10. Uncover and bake for another 15-20 minutes, or until chicken is cooked through and rice is tender.
  11. Let it rest for 5 minutes. Serve.
