Description

A simple one-pan meal with Mexican flavors. It features ground beef and rice.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro


Instructions

  1. Brown ground beef in a large skillet. Drain fat.
  2. Add onion and bell pepper. Cook until softened.
  3. Stir in diced tomatoes, rice, beef broth, taco seasoning, and chili powder.
  4. Season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  6. Top with desired toppings.
