Description
A simple one-pan meal with Mexican flavors. It features ground beef and rice.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup long-grain rice
- 2 cups beef broth
- 1 packet taco seasoning
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- Brown ground beef in a large skillet. Drain fat.
- Add onion and bell pepper. Cook until softened.
- Stir in diced tomatoes, rice, beef broth, taco seasoning, and chili powder.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Top with desired toppings.
Notes
- Adjust seasonings to your preference.
- Feel free to add other vegetables.
- You can substitute ground turkey or chicken for beef.
