Ingredients

  • 1.5 lbs chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup pasta (penne, rotini, etc.)
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven.
  3. Brown chicken, then remove.
  4. Add onion and cook until softened. Add garlic.
  5. Pour in chicken broth and cream.
  6. Stir in pasta.
  7. Bring to a simmer, then add chicken back.
  8. Cook until pasta is done and chicken is cooked through.
  9. Stir in peas.
  10. Season to taste.
  11. Garnish with parsley.
