Description
Simple and delicious one-pot creamy chicken dinner.
Ingredients

- 1.5 lbs chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup pasta (penne, rotini, etc.)
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large pot or Dutch oven.
- Brown chicken, then remove.
- Add onion and cook until softened. Add garlic.
- Pour in chicken broth and cream.
- Stir in pasta.
- Bring to a simmer, then add chicken back.
- Cook until pasta is done and chicken is cooked through.
- Stir in peas.
- Season to taste.
- Garnish with parsley.
Notes
- You can add other vegetables, like carrots or mushrooms.
- Adjust the amount of cream for desired creaminess.
- Serve with crusty bread for dipping.
