Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season chicken with salt and pepper. Cook chicken until browned. Remove and set aside.
  3. Add onion to the pot and cook until softened. Add garlic and cook for 1 minute.
  4. Stir in orzo and cook for 1 minute.
  5. Pour in chicken broth. Bring to a boil, then reduce heat to a simmer.
  6. Return chicken to the pot. Cook until orzo is tender, about 15-20 minutes.
  7. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  8. Garnish with fresh parsley.
