A simple one-pot meal with creamy chicken and orzo.
Ingredients

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season chicken with salt and pepper. Cook chicken until browned. Remove and set aside.
- Add onion to the pot and cook until softened. Add garlic and cook for 1 minute.
- Stir in orzo and cook for 1 minute.
- Pour in chicken broth. Bring to a boil, then reduce heat to a simmer.
- Return chicken to the pot. Cook until orzo is tender, about 15-20 minutes.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
- Garnish with fresh parsley.
Notes
- You can add vegetables like carrots or peas.
- Adjust cooking time based on your orzo.
- For a thinner sauce, add more broth.
